Sunday Dinners

I have been lucky enough to enjoy Sunday evenings with the Amundson family. Undoubtedly, my favorite part of my summer was getting to share meals and conversation with this family. Eating with the Amundsons' was a joy because I got to push my boundaries and try new things. Beth and Dan expanded my eating pallet beyond the scope of bland potatoes and red meat to encompass ethnic foods such as papoosas. If you have never had a papoosa, I suggest you get in a car and drive to Irene's near Silver Spring, Maryland. With out the Amundons I would never have made it to the conclusion of my Magellan because the shock of coming from a community where my ENTIRE family is so close and moving three hundred miles away was especially challenging. I will never forget their hospitality, and I hope that someday, I am in the position to positively effect someone else's life in the way they helped to shape mine.
